Well.. It's sort of like a snickers slice
In a bowl, mix together all the ingredients for the base, until encorporated together. Line a small tray with baking paper, then tip in the mixture and spread it around to flatten and form the base. You want it to be about half an inch thick. Stick it in the freezer whilst you move onto the next step.
For the caramel layer, tip all of the ingredients into a blender and blend until smooth. Take the tray out of the freezer and spread the middle layer onto the base to cover it evenly.
Next, sprinkle over the salted peanuts, squish them down a little and pop it back in the freezer.
For the topping, break up the chocolate and place it in a glass bowl over a small pan of boiling water. On a gentle simmer, stir in the coconut oil as the chocolate melts and continuously stir until the chocolate is completely melted, glossy and smooth. Take the tray out of the freezer and carefully pour the melted chocolate over the middle layer, to complete the layers.
Leave it to set in the fridge or freezer for about 10 minutes and they are good to go! You can then cut them up into as many slices as you like, I'd recommend 12 but you could also do smaller squares. Once in slices you can keep them in the fridge or freezer until you wish to destroy them (they defrost very quickly). Enjoy with a cup of tea!
