A light and flavourful pea and mint soup, easy to throw together for lunch
Peel and slice the onion. Heat the olive oil in a pan then add the butter and the onions along with a pinch of salt. Saute the onions for around 8-10 minutes on a medium heat, turn the heat down if they begin to stick or add a dash of water. Stir occasionally.
Peel and slice the garlic then add it to pan with along with 1 tsp thyme. Cook and stir for 2 more minutes, whilst you boil the kettle to make up the stock. Next, add the peas, mint leaves and 1 litre of veg stock. Add a sprinkling of salt and black pepper and give it a good stir. Bring it to the boil then turn the heat to a medium and cook for 10-15 minutes.
Take off the heat and use a hand blender to whiz to a smooth consistency. Check the seasoning and add more salt or pepper to your taste. Serve with some bread on the side.
