Heavenly Bliss Balls
Little energy balls that taste like they are bad for you but are actually good for you! A tasty snack for anytime of the day.
Ingredients
- 200 g pitted dates
- 110 g ground almonds
- 40 g raw cashews, chopped
- 30 g cacao powder
- 1 pinch salt
- zest of 1 orange
- juice of 1 orange
- desiccated coconut for dusting
Instructions
-
Using a food processor or a high powered blender, blitz the dates and orange juice to a paste.
-
Add the ground almonds, cashew nuts, orange zest, cacao powder and salt then pulse until combined.
-
Tip the mixture onto a piece of baking paper and roll into a log shape (don't worry it will look much more appealing later!) Roll it up into the paper and pop it into the fridge for 30 mins to chill.
-
Once you and the log have chilled, cut the log into about 16-18 pieces and roll each piece into a ball.
-
Sprinkle some desiccated coconut onto a plate and roll each ball around to cover it. (If you don't like coconut you can use more ground almonds or cacao powder).
-
They will keep in the fridge for about a week, if you can make them last that long!
