Danny’s Tofu Scramble
This is one of Danny’s favourite breakfasts. It is super easy and also very nutritious, with tofu being full of protein. It is a great vegan alternative to scrambled eggs but instead of trying to replicate scrambled eggs, this recipe offers up something new, a delicious, healthy and cruelty free breakfast. We recommend serving this up on buttered toast, with some smashed avocado on top too if that’s your kind of thing! I have a slight soy allergy so I can’t indulge in this breakfast and it makes me ever so sad because it smells so tasty! You could also make this up as part of a breakfast fry up, or use it in a burrito or sandwich. I hear a lot of people saying they get bored of the same old breakfasts, so go on, why not give this a try?

Danny's Tofu Scramble
A delicious vegan alternative to scrambled eggs.
Ingredients
- 2 Tbsp vegan butter we use vitalite or flora
- 140 g firm tofu we use "Tofoo" or "Cauldron" brands
- 1/4 tsp ground cumin
- 1/4 tsp turmeric
- 1/2 tsp garlic granules
- large pinch salt
- 3 Tbsp oat/soy cream or sub for a splash of Oat milk
- black pepper to taste
- 1 pinch chilli flakes optional
- 1 Tbsp nutritional yeast optional
- tabasco optional
Instructions

Melt the butter in a small saucepan.

Crumble the tofu through your fingers and stir into the melted butter.

Add the salt, pepper, garlic granules, cumin, turmeric, chilli flakes (optional) and stir for 3-4 minutes. Pop your toast on at this point ready to serve shortly.

Add the oat/soy cream and stir until everything combines.

Serve immediatlely on buttered toast. We recommend some smashed avocado on top too! Season to taste and add a dash of tabasco if you like it hot!
