Prep Time 10 minutes
Cook Time 15 minutes
Servings 12 cookies

  • 125 g dairy free butter we use vitalite or flora
  • 100 g castor sugar
  • 150 g plain flour
  • 1/2 tsp baking powder
  • 1 tsp vanilla extract
  • 1 pinch salt
  • 1 tsp agave nectar or golden syrup
  • 40 g vegan dark chocolate

  1. Pre-heat the oven to 180°c and line a baking tray with baking paper.

  2. In a large mixing bowl, thorouhghly mix together the butter and sugar until creamy.

  3. Next, add the vanilla extract, agave nectar, salt and baking powder and mix together. Break up the chocolate into small chocolate chip sized pieces and stir it through the mixture.

  4. Sieve in the flour and stir through until everything is fully combined.

  5. Spoon the mixture into 12 even cookie dough blobs on the tray, then flatten them down slightly but not all the way. Make sure they are not touching and that there is at least a finger space in between the cookies as they will spread out when they bake.

  6. Bake in the oven for 12-15 minutes until light golden brown (darker at the edges). Leave to cool on a wire rack for 5 minutes (if you can bare it). Enjoy with a nice cup of tea.
