Homemade Vegan Green Pesto

Here is our easy, go-to recipe for green pesto. It’s so simple, but an absolutely delightful flavour, excellent to mix into a pasta dish or swirled into pastry or even under your cheese on toast. All you’ll need is a good blender. We use a nutribullet which is perfect.

Ingredients

  • 5 Tbsp olive oil
  • 25 g+ fresh basil leaves works with this amount but pack in some more if you have it!
  • 25 g pine nuts
  • 20 g nutritional yeast
  • ½ lemon, juiced
  • 1 clove garlic
  • 1 pinch salt and pepper
  • 1 splash water as needed

Instructions

  1. Add all the ingredients to a high powered blender (something like a nutribullet works really well) and blitz to a paste. Add a splash of water to loosen it up as needed. Easy! Keep covered in the fridge for a week.
